Answer
Utlities and costs are going to vary widely depending on what services you choose and what your usage is.

Electricity: if you have a poorly designed house/apt and need to run AC, a large family, a lot of hot showers, no solar or other cost-cutting water heating, it can climb really high. I have a family of 3 with a dog, lots of hot showers and laundry for the 2 athletic types in the family, AC for the non (me), and we live in a condo with NO cross-ventilation. My electric bill was about $320 last month.
My mom has 4 adults in a house, rarely runs AC, uses solar water heating and freaks out when her elec gets over $150.
No one uses their oven except for the turkey, and then maybe only to reheat the prepared meal from A Cetering Experience/Zippys.

Phone: Landline? No one has a landline anymore. It's about $40/month and so not worth it unless you bundle it with internet and mobile phone. Okay, it's necessary for some configurations of alarm system monitoring, and faxing, and... yeah, phone service during a power outage.

Alarm system, monitored, $25/mo (Custom Security) to $75/mo (Alert Alarm, Sonitrol) or unmonitored, buy a dialer from Radio Shack and it can call you and you can respond to the burglar alarm. Probably requires an analog landline. We actually dropped the landline, paid for a cellular module (a few $hundred installed) and pay a few bucks a month more for the cellular monitoring (so $5/mo vs. $40/mo for a landline). If the power goes out and cell service goes too, we can yell to one of our hundreds of neighbors. Someone might have a landline. Oh yeah, $5/yr to register the alarm system with HPD. $200 fine if you have more than 4 false alarms/yr and don't go to their remedial alar-ownership class.

Cable TV: Bundle it with your internet connection, some also bundle home phone. It's anywhere from ~$40/month to $hundreds for premium channels and UH Football subscription. Many condos have basic cable service at a good discount, as part of the maint. fee, so it might be included in rent. Add for XBox or other premium game services.

Gas (water heater, gas oven, gas dryer), anywhere from $20/mo on up per appliance, reduces electricity by more than that, though, I'd guess by about double the cost of gas.

Water: usually included as maint fee/rent. This can vary depending on the condo (if they have large planted areas and car wash, etc.). Billed quarterly, maybe $100/qtr but can vary widely if you have a large lawn, lots of baths, a pool, etc.

Maint fees, if you buy a house or condo in a complex, can include utility costs for lighting/watering common areas, running elevators, etc. It's usually passed on in the total rent, if you are a renter.

And finally: wireless mobile (cellular) phone service and wireless internet: you can spend as much as you want on this. Basic plans start at about $30/mo but plans like Mobi can be $99/mo for unlimited text/talk/toll calling. Wireless internet plans can be anywhere from $30/mo to $100/mo. Some employers have discounted plans for AT&T and maybe other providers.

Seriously, my family could easily spend $400/mo on what I term "communications" alone. Add to that about $300-$350/mo elect, and that $5/day Starbucks habit seems like a good deal if you get free ac and wifi.
